"Shawarma is the Arabic term for turn around or contact. The name is due to the typical for the meat preparation turning technology. Similarly, as the Turkish doner kebab mutton or lamb is traditionally placed on large rotating skewers and grilled by slowly turning before a hot heat source.
Prior to cooking, the meat is - in this country, it may also be optionally beef or chicken - inserted several hours in a marinade of lemon juice and spices, such as cumin, cinnamon, cardamom, turmeric, coriander, paprika, pepper, peppermint, garlic and cloves. This gives it its slightly sour, spicy taste after grilling. Usually it is wrapped with lactic acid pickled vegetables, baked potato wedges, sumac and sesame paste in a flat bread and then eaten as a highly nutritious snack."
